The Avocado Zest is delicious. It has a fresh, lemon taste.  I drizzle it on my salads. I recommend it to anyone who wants a high quality oil with a hint of citrus for salads and fish.

Roasted Sweet Potato with Avocado Oil

2 lbs Sweet potato, peeled and cut into 1 ½ inch pieces
Avocado oil
Black pepper
1 large onion, chopped
Juice of one lime
½ cup macadamia nut oil


Preheat oven to 350F/180C.

Toss the potatoes and onion with a drizzle of avocado oil, salt and pepper. Spread on a sheet pan and roast until tender and golden brown (aprox. 40mins). Stir potatoes and onions halfway through cooking process so they cook evenly.

In a small bowl whisk together the lime juice and macadamia nut oil. Transfer the potatoes and onions in a large bowl, add the lime juice mix and toss. Season with salt and pepper, to taste.
