The Avocado Zest is delicious. It has a fresh, lemon taste.  I drizzle it on my salads. I recommend it to anyone who wants a high quality oil with a hint of citrus for salads and fish.

Lemon Thyme Chicken wrapped in Proscuitto

4 Chicken Breasts
Zest and juice of 1 lemon
1/4 cup Avocado Zest Oil
1/4 cup fresh thyme
8 slices of prosuitto


Place chicken breasts on a large cutting board, top with plastic wrap and pound with a rolling pin until they are ~ 1 inch thick.

Place in bowl with lemon juice and zest, oil and thyme for at least one hour.

Remove chicken from marinade and top with two slices of proscuitto, pressing down firmly.

Heat a pan with 1 Tbsp oil to medium high and add the chicken proscuitto side down. Cook for 4 minutes, and turn cooking for an additional 4 minutes. Turn once more to the proscuitto side for 30 seconds and remove from heat, allowing to rest for at least a minute before serving.
